El Salvador Pacamara
Miguel Menendez has developed a sustainable model of production in his farms. Las Delicias is located in Santa Barbara (Apaneca Ilamateopec Mountain range) . Apart from being certified Rainforest Alliance it is also certified 100% Bourbon. The Bourbon variety has been replaced for new highly productive hybrids, in most of the intensive coffee producing systems of the world, at expenses of cutting down the native forest. But at Miguel’s farms this coffee variety is so well adapted that has become part of the forest ecosystem. Other coffee varieties as Typica, Pacas (natural hybrid of Bourbon) and Pacamara (hybrid Pacas x Maragogype) are also produced within the shade grown system. Miguel’s coffees have been ranked in the first positions of some local and international coffee quality competitions.
The cup profile offers good body, delicate acidity and sweet flavor. The finish is the most striking feature of the cup. It carries a cinnamon spiciness with subtle notes of chocolate that lingers well after the cup is finished. Miguel strictly checks the whole process from the plant to green coffee. He relies on local labour and modern technology to produce a very consistent high quality coffee.
