Jesus Cortes Idrobo owns a 7-hectare farm where he grows Castillo variety, being sure to harvest the coffee when the cherries ripen to a rich purple color. He does a “double” fermentation, holding the coffee in a hopper for 12 hours before fermenting it in a tank for 24 hours. It’s washed three times to remove the mucilage, then dried in a drying structure with a gable roof for 10 days. Jesus has also made significant quality improvements to his coffee by adding a floater-removal step before he begins the processing of his lots.
